Veggie solutions/veggies for one

I have found that I enjoy the Green Giant® brand of frozen veggies in a pouch that you steam in the microwave. Each pouch contains two servings (or one really big serving) of vegetables; many selections are quite healthy. The second serving can be saved for later that day or for the following day. (Storageware comes in handy!)

My favorite is the green beans (nice bright color and lovely taste) that come with a packet of toasted almond slivers. Wonderful flavor!

I've also used two different veggie medleys to add to vegetable soup from a can. Really "ups" the filling aspect and the fiber, which means fewer Weight Watchers® POINTS. Yippee!!!

This brand also offers single-serving frozen combos that come 2 or 4 in a pack.

I'm not sure if other brands offer similarly sized items.

Bird's Eye brand offers smaller sized portions (serves 2-3) as well, though not as easy to find as the GG brand.  Seems to be a bit better quality too, but you do pay for it (for budget watchers).  My favorites are the 'baby' blends like the baby broccoli blend.

If you have a Super Target in your area, they carry quite a variety of veggie blends in their store brands -- Archer Market/Farms I think...  Brain is a little tired.  Varieties that I haven't seen in any other store, which is good as I like to switch things up on a regular basis to avoid food boredom.

Now if only FRESH veggies would come in smaller sizes.  It's hard for a single person to eat a 'family pack' of salad fixings before it goes bad!

I've tried to eat more veggies and have finally started doing the fusion drinks in order to get more servings in.
