I was sitting here savoring this delicious chocolate chip cookie that took me mere minutes to make, and it occurred to me I should share this wonderful little secret with my Purposeful Singleness friends! I love recipes like this I can make quickly without dirtying many dishes. I even made it gluten-free by using brown rice flour.
Chocolate Chip Cookie for One
2 Tablespoons butter, melted (or coconut oil or other oil of your choice)
1 Tablespoon water
1 Tablespoon brown sugar
3 drops vanilla
A pinch of salt
A large pinch of baking powder
1/4 cup white flour (or 2 rounded Tablespoons brown rice flour)
2 Tablespoons chocolate chips (or more, I won’t tell!)
In a microwave-safe bowl, melt the butter for a few seconds in the microwave, then add the water, brown sugar, vanilla, salt and baking powder and mix together well. Add the flour and mix in thoroughly. Finally, fold in the chocolate chips and spread the batter evenly in the bottom of the bowl.
Microwave approximately 35 seconds. This may vary from one microwave to another.
